  • 1/2 cup (113g) unsalted butter, melted
  • 45 large garlic cloves, finely minced or pressed
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 cup (25g) grated Parmesan cheese (optional)
  • Pinch of salt, to taste
  • Pinch of freshly cracked black pepper
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the baguette or Italian bread into 1-inch cubes. Let fresh bread sit out for 1-2 hours to dry slightly for better crunch.
  3. Melt 1/2 cup (113g) unsalted butter in a small saucepan or microwave-safe bowl until fully liquid but not browned.
  4. Stir the finely minced garlic into the melted butter. Add a pinch of salt, freshly cracked black pepper, and red pepper flakes if using. Let sit for a couple of minutes to infuse.
  5. Place bread cubes in a medium mixing bowl. Pour the garlic butter mixture over the bread and toss gently but thoroughly to coat every piece. If using Parmesan, sprinkle it in now and toss again.
  6. Spread the coated bread cubes evenly on a parchment-lined baking sheet, avoiding overcrowding.
  7. Bake for 12–15 minutes until golden and crispy on the outside. Watch closely to prevent burning the garlic.
  8. Remove from oven, sprinkle chopped fresh parsley over the hot bites, and gently toss to distribute.
  9. Let the bites rest for a few minutes to crisp up further before serving.

Notes

Use slightly stale bread for better crispness. Avoid over-saturating bread with butter to prevent greasiness. Keep a close eye on baking to avoid burning garlic. Fresh garlic is preferred for best flavor. Reheat leftovers in the oven at 350°F for 5-7 minutes to restore crispness. For dairy-free, substitute butter with olive oil or vegan margarine and omit Parmesan or use vegan cheese.
