Crispy Easy Blackstone Breakfast Smash with Bacon and Cheese

A quick and easy breakfast recipe featuring crispy smashed beef patties cooked on a Blackstone griddle, topped with smoky bacon and melted cheddar cheese. Perfect for busy mornings or casual gatherings.

  • 1 lb (450 g) ground beef (80/20 blend)
  • 68 slices thick-cut bacon (Applewood smoked preferred)
  • 68 slices sharp cheddar cheese
  • Salt and freshly ground black pepper, to taste
  • Cooking oil (vegetable or canola), for griddle
  • 1 tablespoon unsalted butter
  • Fresh hamburger buns or sturdy sandwich rolls, toasted
  • Optional toppings: sliced avocado, fresh tomato slices, fried egg

Instructions

  1. Preheat your Blackstone griddle on medium-high heat to about 375°F (190°C), about 5 minutes.
  2. Lay out bacon strips on the griddle and cook 4-6 minutes per side until crispy. Use tongs to flip carefully. Transfer to paper towel-lined plate to drain excess grease.
  3. In a mixing bowl, season ground beef with salt and pepper. Mix gently and divide into 6 equal portions (about 3 oz / 85 g each).
  4. Lightly oil the griddle surface with a paper towel dipped in cooking oil to prevent sticking.
  5. Place each beef portion on the griddle and smash firmly with a metal spatula into thin discs about 1/4 inch (6 mm) thick. Hold pressure for 10 seconds to create crispy edges.
  6. Cook patties undisturbed for 2-3 minutes until edges brown and crisp. Flip carefully.
  7. Immediately place a slice of cheddar cheese and a small dab of butter on each patty. Cook another 1-2 minutes until cheese melts.
  8. While patties finish cooking, slice buns and toast cut side down on the griddle for about 1 minute until lightly toasted.
  9. Assemble burgers by layering bacon strips on bottom bun, adding cheesy patty, then optional toppings like avocado or tomato. Cap with top bun and serve immediately.

Notes

Use 80/20 ground beef for juicy, flavorful patties. Press patties firmly and cook undisturbed to develop crispy edges. Bacon fat left on the griddle adds flavor to patties. Toast buns on the griddle for extra crunch. Optional fried egg can be cooked sunny-side up on the griddle while cheese melts. For gluten-free, swap buns for gluten-free bread or lettuce wraps. Vegetarian options include plant-based meat and dairy-free cheese.
