  • 1 large baguette or Italian loaf
  • 1/2 cup (113g) unsalted butter, softened
  • 45 cloves garlic, minced
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) sharp cheddar cheese
  • Optional: 1/4 cup (25g) grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley or basil
  • Pinch of salt
  • Freshly cracked black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine softened butter, minced garlic, chopped parsley, salt, and freshly cracked black pepper. Mix until evenly incorporated.
  3. Cut the baguette in half lengthwise, then slice each half into about 3-inch sections, leaving a hinge so the bread holds together.
  4. Generously spread the garlic butter mixture on the cut sides of the bread.
  5. Sprinkle shredded mozzarella evenly over each section, then add sharp cheddar on top. If using Parmesan, sprinkle it last.
  6. Wrap the entire loaf loosely in foil and place it on a baking sheet. Bake for 15 minutes to melt the cheese and let the garlic butter soak in.
  7. Carefully unwrap the foil and switch the oven to broil. Broil the bread for 2-3 minutes until the cheese bubbles, turns golden, and edges get crispy. Watch closely to avoid burning.
  8. Let the bread cool for a couple of minutes before serving to help the cheese set slightly for cleaner pulls.

Notes

Use slightly day-old bread for best texture. Watch the bread closely during broiling to prevent burning. For a dairy-free version, substitute vegan butter and plant-based cheeses. Prepare garlic butter ahead and bring to room temperature before spreading. Avoid overloading with butter or cheese to prevent sogginess.
