  • 1/2 cup buttermilk ranch dressing (e.g., Hidden Valley)
  • 1 tablespoon fresh dill or chives, chopped (optional)

  • Fresh celery sticks, cut into 2-inch pieces
  • Carrot sticks (optional)
  • Fresh parsley or cilantro for garnish

Instructions

  1. Prep the chicken: Cut chicken into 1-inch cubes. Pat dry with paper towels and season lightly with salt and pepper.
  2. Set up dredging station: In one shallow bowl, combine flour, garlic powder, onion powder, smoked paprika, salt, and pepper. In another bowl, beat eggs until smooth.
  3. Coat the chicken: Dredge each cube in seasoned flour, shake off excess, dip in beaten eggs, then coat again in flour mixture (double-dredge). Place on a plate.
  4. Heat oil: Pour about 1 inch of oil into a large skillet and heat over medium-high heat to 350°F.
  5. Fry the chicken: Add coated chicken pieces in a single layer without overcrowding. Fry 3-4 minutes per side until golden brown and internal temperature reaches 165°F. Transfer to paper towel-lined plate.
  6. Toss in buffalo sauce: In a large bowl, whisk together buffalo wing sauce and melted butter. Add hot fried chicken and toss gently until coated.
  7. Assemble skewers: Thread a piece of buffalo chicken onto a skewer, followed by a celery stick, then another piece of chicken. Repeat for all skewers.
  8. Arrange the board: Place skewers on a large serving board or platter. Add small bowls of ranch dressing for dipping, scatter extra celery, carrot sticks, and blue cheese crumbles. Garnish with fresh parsley or cilantro.
  9. Serve immediately: Enjoy hot and fresh for maximum crunch.

Notes

Pat chicken dry for maximum crunch. Double-dredge for shatter-crisp coating. Keep oil at 350°F. Toss sauce while chicken is hot. For make-ahead, fry chicken up to 2 hours ahead and toss in sauce just before serving.
