  • 1 teaspoon vanilla extract

  • 3 tablespoons unsalted butter
  • 3 ripe but firm bananas, sliced diagonally
  • 2 tablespoons brown sugar
  • Maple syrup for serving (optional)

Instructions

  1. In a large shallow bowl, whisk together 4 large eggs, 1 cup heavy cream, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, and a pinch of salt until fully combined and slightly frothy (about 3 minutes).
  2. Dip each slice of brioche into the custard mixture for about 20 seconds per side, soaking without becoming soggy. Place soaked slices on a wire rack to drain excess liquid.
  3. Heat 2 tablespoons unsalted butter in a nonstick or cast iron skillet over medium heat until melted and slightly bubbling.
  4. Place soaked brioche slices in the pan without overcrowding. Cook for 3-4 minutes per side until golden brown and crispy, flipping gently with a spatula or tongs.
  5. While the toast cooks, melt 1 tablespoon unsalted butter in a small skillet over medium heat. Add 2 tablespoons brown sugar and stir until dissolved and bubbling.
  6. Add sliced bananas and cook for 2-3 minutes, gently flipping once, until bananas are soft and golden but still hold their shape. Remove from heat.
  7. Plate the crispy brioche French toast, spoon caramelized bananas generously over the top, and drizzle with maple syrup if desired. Serve immediately.

Notes

Do not soak the brioche slices too long to avoid sogginess; about 20 seconds per side is ideal. Use medium heat to get a crispy crust without burning. Caramelize bananas gently to keep them firm and glossy. Keep cooked slices warm in a 200°F (95°C) oven if preparing in batches.
