Crispy Blackstone Smash Burgers with Caramelized Onions

A quick and easy recipe for smash burgers cooked on a Blackstone griddle, featuring crispy edges and sweet caramelized onions for a perfect balance of flavors.

  • 1 pound (450 g) ground beef (80/20 blend)
  • 2 large yellow onions, thinly sliced
  • 2 tablespoons (30 ml) butter or vegetable oil
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 4 burger buns (brioche or potato rolls recommended)
  • Optional: American or cheddar cheese slices
  • Optional: Pickles, lettuce, tomato

Instructions

  1. Preheat your Blackstone griddle to around 400°F (204°C).
  2. Melt butter or oil on one side of the griddle or in a separate skillet. Add sliced onions and cook over medium heat for 20-25 minutes, stirring occasionally until deep golden and caramelized.
  3. Divide ground beef into 4 equal balls (about 4 ounces/115 g each), handling gently to avoid overworking.
  4. Place each ball on the hot griddle and press down firmly with a spatula to about ¼-inch (6 mm) thickness. Hold pressure for 10 seconds to set the crust.
  5. Season patties immediately with kosher salt and freshly cracked black pepper.
  6. Cook patties for 2-3 minutes without moving to develop a crispy crust, then flip carefully.
  7. If using cheese, place a slice on each patty after flipping and cook for another 1-2 minutes until melted.
  8. Toast the buns cut-side down on the griddle for 1-2 minutes until golden.
  9. Assemble burgers by placing patties on buns, topping with caramelized onions and any additional toppings like pickles and lettuce.

Notes

Caramelize onions ahead of time for better flavor and to save time. Use a hot griddle (around 400°F) for the perfect crispy crust. Press patties firmly once and flip only once. Toast buns just before assembling to avoid sogginess.
