These crispy baked buffalo cauliflower bites are a game-day favorite, featuring a shatteringly crisp coating and tangy buffalo sauce. Ready in just 30 minutes, they’re a healthier alternative to chicken wings that even skeptics will love.

Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • ½ cup all-purpose flour
  • ½ cup milk (dairy or plant-based)
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon paprika (smoked or regular)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 2 tablespoons butter, melted
  • Optional garnishes: chopped green onions, fresh parsley, crumbled blue cheese

Instructions

  1. Preheat oven to 425°F (218°C). Line a large baking sheet with parchment paper or a silicone mat. If using a wire rack, place it on the baking sheet.
  2. Remove leaves and core from cauliflower. Cut into bite-sized florets (1 to 1.5 inches). Pat dry with a clean towel.
  3. Set up three bowls: In the first, combine flour, garlic powder, onion powder, paprika, salt, and pepper. In the second, pour milk. In the third, add panko breadcrumbs.
  4. Working in batches, dip each floret into the flour mixture, shaking off excess. Then dip into milk, letting extra drip off. Finally, roll in panko, pressing gently to adhere. Place on prepared baking sheet, ensuring florets are not touching.
  5. Bake for 20 to 25 minutes, flipping halfway through with tongs, until deep golden brown and crispy.
  6. While cauliflower bakes, combine buffalo sauce and melted butter in a small bowl. Whisk until smooth.
  7. Transfer baked cauliflower to a large bowl. Pour buffalo sauce over and toss gently with tongs until evenly coated. Serve immediately with ranch or blue cheese dressing and celery sticks.

Notes

For best results, pat cauliflower dry before coating. Do not overcrowd the baking sheet. Serve immediately after tossing in sauce for maximum crispiness. To reheat leftovers, use a 375°F oven for 5-7 minutes; avoid microwave.
