  • 12 medium fresh jalapeños, halved and deseeded
  • 8 oz (225 g) full-fat cream cheese, softened
  • 1 cup (100 g) shredded cheddar cheese
  • 12 slices thin-cut bacon, cut in half crosswise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: 2 tablespoons finely chopped green onions or chives

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. Slice each jalapeño in half lengthwise and scoop out seeds and membranes. Set aside.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, black pepper, and optional green onions or chives. Mix until smooth.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or piping bag.
  5. Wrap each filled jalapeño half tightly with a half slice of bacon, spiraling from bottom to top. Secure with a toothpick if needed.
  6. Place the bacon-wrapped jalapeño halves seam side down on the prepared baking sheet.
  7. Bake for 20-25 minutes, flipping the bites halfway through (about 12 minutes) to crisp bacon evenly.
  8. Let the bites cool for 5 minutes before serving.

Notes

Use thin-cut bacon for best wrapping and crispiness. Remove jalapeño seeds to reduce heat. Flip bites halfway through baking for even crisping. Tent with foil if bacon browns too fast before cheese melts. Can be grilled over indirect medium heat for 20 minutes as an alternative cooking method.
