Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt, plus more for seasoning pork
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons mayonnaise
  • Olive oil spray
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Extra grated Parmesan for serving

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides lightly with salt and pepper. Let them sit at room temperature for 10 minutes.
  2. Set up your coating station. In one shallow bowl, whisk together the egg and mayonnaise until smooth. In another shallow bowl, combine the grated Parmesan, panko breadcrumbs, garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and black pepper. Mix together with a fork.
  3. Coat the chops. Working with one chop at a time, dip it into the egg mixture, letting any excess drip off. Then press it firmly into the breadcrumb mixture, making sure every surface is covered. Place the coated chop on a plate and repeat with the remaining chops.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  5. Arrange the chops in a single layer in the air fryer basket. Do not overcrowd. Lightly spray the tops with olive oil spray.
  6. Cook for 10-12 minutes, flipping halfway through. At the 6-minute mark, open the basket, flip each chop carefully with tongs, and spray the other side with oil. The chops are done when the internal temperature reaches 145°F (63°C) and the crust is golden brown and crispy.
  7. While the chops cook, make the garlic butter. In a small skillet over medium-low heat, melt the butter. Add the minced garlic and cook for about 30 seconds until fragrant. Remove from heat and stir in the fresh parsley.
  8. Rest the chops for 3-5 minutes after they come out of the air fryer. Drizzle the garlic butter over the top and sprinkle with extra Parmesan.

Notes

For best results, use 1-inch thick boneless pork chops with good marbling. Do not skip the mayonnaise in the egg wash—it helps the coating stick and keeps the meat moist. Let the coated chops rest for 5 minutes before air frying to help the coating adhere. If the coating starts browning too fast, reduce the temperature to 375°F for the last few minutes. Leftovers can be stored in the refrigerator for up to 3 days and reheated in the air fryer at 350°F for 3-4 minutes.
