Ingredients

Scale
  • 2 pounds chicken wings (about 1214 wings, separated into drumettes and flats)
  • 1 tablespoon baking powder (NOT baking soda)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/3 cup honey
  • 3 tablespoons sriracha
  • 1 tablespoon unsalted butter
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • Pinch of red pepper flakes (optional)
  • Sesame seeds for garnish
  • Thinly sliced green onions for garnish
  • Lime wedges for serving

Instructions

  1. Pat the chicken wings completely dry with paper towels. If you have time, let them sit uncovered in the fridge for 30 minutes after drying.
  2. In a large bowl, whisk together baking powder, salt, pepper, garlic powder, and onion powder. Add the dried wings and toss thoroughly with your hands until every surface is coated. Let sit at room temperature for 10 minutes.
  3. Preheat air fryer to 400°F (200°C) for 3-5 minutes. Arrange wings in a single layer in the basket, leaving space between each wing.
  4. Air fry at 400°F for 12 minutes. Flip each wing using tongs, then cook for another 10-12 minutes until deep golden brown and crispy. Internal temperature should reach 165°F (74°C).
  5. While wings cook, make the glaze: In a small saucepan over medium-low heat, combine honey, sriracha, butter, rice vinegar, and minced garlic. Stir until butter melts and mixture thickens slightly, about 2-3 minutes. Remove from heat and stir in red pepper flakes if using.
  6. Transfer cooked wings to a large bowl. Pour about half the glaze over them and toss gently with tongs until coated. Add more glaze as desired.
  7. Transfer glazed wings to a serving platter. Sprinkle with sesame seeds and sliced green onions. Serve immediately with lime wedges.

Notes

Don’t skip drying the wings thoroughly; moisture prevents crispiness. Baking powder is essential—do not substitute with baking soda. Avoid overcrowding the air fryer basket; cook in batches if needed. Glaze right before serving to maintain crunch. For oven method, bake at 425°F on a wire rack for about 45 minutes, flipping halfway.
