  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • ½ teaspoon garlic powder (for ranch dip)
  • ½ teaspoon onion powder (for ranch dip)
  • 1 tablespoon chive, chopped (optional)
  • Salt and pepper to taste (for ranch dip)
  • 12 tablespoons milk (to thin ranch dip)

Instructions

  1. Rinse and dry the cauliflower. Cut into evenly sized bite-sized florets (about 1 to 1.5 inches).
  2. In a medium bowl, whisk together flour, water, paprika, garlic powder, onion powder, salt, and black pepper until smooth and thick enough to coat the cauliflower.
  3. Dip each cauliflower floret into the batter, shaking off excess, and place on a plate or tray.
  4. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  5. Lightly spray the air fryer basket with cooking spray. Arrange battered cauliflower in a single layer without overcrowding. Cook in batches if needed.
  6. Air fry at 400°F (200°C) for 12 minutes, shaking or turning halfway through until golden and crispy.
  7. Warm buffalo sauce until just warm. Toss cooked cauliflower bites gently in the buffalo sauce to coat.
  8. In a small bowl, mix Greek yogurt, mayonnaise, dill, parsley, chives, garlic powder, onion powder, salt, and pepper. Thin with milk to desired consistency and chill if possible.
  9. Serve the buffalo cauliflower bites immediately with the ranch dip. Optionally, sprinkle with fresh chives or smoked paprika.
  10. If bites become soft after saucing, return to air fryer for 2-3 minutes to crisp up.
