  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh chives, finely chopped (plus longer stalks for garnish)
  • Smoked paprika (optional, for dusting)

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about an inch (2.5 cm). Bring to a boil over medium-high heat, then immediately cover and remove from heat. Let sit for 12 minutes.
  2. Drain hot water and transfer eggs to an ice water bath. Let sit for at least 5 minutes to cool completely. Gently tap each egg on the counter and peel under running cold water to remove shells easily.
  3. Slice eggs in half lengthwise. Carefully scoop out yolks into a mixing bowl. Mash yolks with a fork until crumbly but not powdery.
  4. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, ½ teaspoon salt, ¼ teaspoon black pepper, and half of the chopped chives. Mix until smooth and creamy. If the mixture feels dry, add a little more mayo, one teaspoon at a time.
  5. Using a spoon or piping bag fitted with a round tip, fill each egg white half with the yolk mixture. Shape the filling into small rounded mounds to mimic golf balls. Tap the plate gently to settle the filling.
  6. Place a single fresh chive stalk vertically into the top of each filled egg to resemble a golf tee.
  7. Optionally, lightly dust with smoked paprika for a subtle color and smoky hint.
  8. Refrigerate deviled eggs for at least 30 minutes before serving to allow flavors to meld and the filling to firm up.

Notes

Use the cold water start method to prevent green rings around yolks. Peel eggs under running cold water for easier shell removal. Do not overfill egg whites to maintain neat golf ball shapes. Prepare a few hours ahead and add chive garnish just before serving for freshness. Mayonnaise can be substituted with Greek yogurt or vegan mayo for dairy-free options.
