  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of salt

Instructions

  1. In a mason jar or airtight container, combine the rolled oats, pumpkin pie spice, chia seeds (if using), and a pinch of salt. Stir to distribute the spices evenly.
  2. Add the milk, pumpkin puree, Greek yogurt, maple syrup, and vanilla extract.
  3. Stir thoroughly until all ingredients are fully combined, breaking up any clumps of pumpkin puree. The mixture should be smooth and uniform.
  4. Seal the jar or container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats well. If too thick, add a splash of milk (1-2 tablespoons) and stir again.
  6. Add desired toppings (e.g., extra maple syrup, pumpkin seeds, chopped pecans, fresh fruit) and enjoy cold or warm (microwave 45-60 seconds).

Notes

Use rolled oats, not quick or steel-cut oats, for the best texture. Stir thoroughly to avoid clumps of pumpkin puree. The oats keep in the fridge for up to 5 days.
