Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×9-inch baking pan with parchment paper, leaving some overhang on two opposite sides.
  2. Make the crust: In a medium bowl, combine 1 ½ cups graham cracker crumbs, ¼ cup sugar, and a pinch of salt. Pour in 6 tablespoons of melted butter and stir until the mixture looks like wet sand and holds together when pressed.
  3. Press the crust into the pan: Dump the crumb mixture into your prepared pan and press it down firmly and evenly using the bottom of a flat measuring cup.
  4. Pre-bake the crust: Bake the crust for 10 minutes until lightly golden and fragrant. Set aside to cool while you make the filling. Leave the oven on.

  8. Pour the filling over the crust: Pour the cheesecake filling onto the pre-baked crust. Use a spatula to spread it evenly to the edges. Tap the pan gently on the counter to release air bubbles.
  9. Bake the bars: Bake for 35-40 minutes, or until the edges are set and the center is just slightly jiggly (like Jell-O). The top should be lightly golden around the edges.
  10. Cool completely: Let the bars cool on a wire rack for about 1 hour at room temperature. Then refrigerate for at least 4 hours, preferably overnight.
