A comforting and easy one-pot creamy chicken and orzo recipe perfect for quick weeknight dinners, featuring tender chicken breasts simmered in a luscious sauce with sun-dried tomatoes and Parmesan.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed, drained)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup orzo pasta (about 160g)
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil, chopped

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and Italian seasoning. Let rest.
  2. Heat olive oil in a large deep skillet over medium-high heat. Sear chicken breasts for 4-5 minutes per side until golden but not fully cooked. Remove and set aside.
  3. Lower heat to medium. Add minced garlic and sauté for 30 seconds until fragrant. Add sun-dried tomatoes and stir for 1 minute.
  4. Pour in chicken broth and heavy cream. Stir to combine, then add orzo pasta. Stir gently, scraping browned bits from pan bottom.
  5. Nestle chicken breasts back into the sauce, partially submerged. Cover with lid and simmer on low for about 15 minutes until orzo is tender and chicken is fully cooked (165°F internal temp).
  6. Remove chicken to a plate. Stir grated Parmesan into sauce until melted and silky. Adjust seasoning with salt and pepper. Add more broth or cream if sauce is too thick.
  7. Slice chicken and serve over creamy orzo. Garnish with chopped fresh basil and serve immediately.

Notes

Do not overcrowd the pan when searing chicken to get a golden crust. Keep simmer low after adding broth and cream to prevent curdling. Use freshly grated Parmesan for best sauce texture. Let chicken rest before slicing. Stir gently during last minutes to prevent orzo sticking. If sauce is thin, cook uncovered for 2-3 minutes to thicken.
