  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup wild rice blend (about 185 grams)
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth (about 1.4 liters), preferably unsalted
  • 1 cup heavy cream (240 ml)
  • 2 tablespoons butter (28 grams)
  • 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: 1 cup sliced mushrooms

Instructions

  1. Dice the carrots, celery, and onion into small, uniform pieces (about 1/4 inch). Mince the garlic finely.
  2. Optional: In a skillet over medium heat, melt butter and sauté onions, carrots, and celery for 5-7 minutes until softened. Add garlic for the last minute.
  3. Transfer sautéed veggies to the crockpot. Add whole chicken breasts, wild rice blend, chicken broth, thyme, and mushrooms if using. Stir gently.
  4. Cover and cook on low for 6-8 hours. Check at 6 hours for tender rice and shreddable chicken. Add broth or water if needed.
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the crockpot and stir gently.
  6. Stir in heavy cream and season with salt and pepper. Cook on low for another 10-15 minutes to warm through.
  7. Serve warm, garnished with fresh thyme or parsley if desired.

Notes

Keep the lid on during cooking to maintain moisture and prevent rice from drying out. Avoid stirring too frequently. Check soup at 6 hours to adjust liquid and texture. For dairy-free, substitute heavy cream with coconut milk or cashew cream. For vegetarian, use vegetable broth and add tofu or chickpeas.
