Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt, pepper, and Italian seasoning. Pound the chicken to an even thickness of about ½ inch (1.3 cm) if possible. (Prep time: 5 minutes)
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When shimmering, add the chicken breasts and cook about 4-5 minutes per side until golden brown and mostly cooked through (internal temperature around 150°F or 65°C). Remove chicken and set aside. (Cooking time: 10 minutes)
  3. Lower heat to medium. In the same pan, add minced garlic and chopped sun-dried tomatoes. Stir for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Pour in 1 cup chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Stir in ½ cup heavy cream and let the sauce gently bubble and thicken for 3-4 minutes.
  5. Stir in the freshly grated Parmesan cheese until melted and smooth. Add fresh spinach and let it wilt into the sauce for 2-3 minutes.
  6. Nestle the chicken breasts back into the sauce. Spoon sauce over the top and simmer on low for another 5 minutes to finish cooking and absorb flavors.
  7. Taste the sauce and adjust seasoning with salt, pepper, or red pepper flakes if desired. Garnish with chopped fresh basil before serving.
