Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1.5 pounds boneless, skinless chicken breasts or thighs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons all-purpose flour
  • Salt and black pepper to taste
  • 2 cups fresh spinach (optional)
  • Fresh parsley or basil for garnish

Instructions

  1. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and cook for 4-5 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  2. Brown the chicken: Season chicken with salt and pepper. Push onions to the sides, place chicken in the center, and cook for 4-5 minutes per side until golden brown. Remove chicken to a plate and set aside.
  3. Bloom the spices: Reduce heat to medium-low. Add oregano, thyme, and red pepper flakes to the pot. Stir for 30 seconds.
  4. Add flour and sun-dried tomatoes: Sprinkle flour over the onion mixture and stir constantly for 1 minute. Add chopped sun-dried tomatoes and stir to combine.
  5. Pour in the broth: Slowly pour in chicken broth while stirring. Scrape the bottom of the pot to release browned bits. Bring to a gentle simmer.
  6. Shred the chicken: Return browned chicken to the pot. Cover and simmer on low for 15-20 minutes until chicken is cooked through. Transfer chicken to a cutting board, shred with two forks, and return to the pot.
  7. Make it creamy: In a small bowl, whisk together heavy cream and Parmesan cheese. Slowly pour into the soup while stirring constantly. Simmer uncovered for 5 minutes until slightly thickened.
  8. Add spinach (if using): Stir in fresh spinach and cook for 2-3 minutes until wilted.
  9. Season and serve: Adjust salt and pepper to taste. Ladle into bowls and garnish with fresh parsley or basil. Serve hot with crusty bread or a side salad.

Notes

For best results, let cream come to room temperature before adding to prevent curdling. This soup tastes even better the next day as flavors meld. To freeze, cool completely and store in airtight containers for up to 3 months. For a thicker soup, let it simmer uncovered longer; for thinner, add more broth.
