  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • ½ cup chopped sun-dried tomatoes packed in oil (about 75 g)
  • 1 cup heavy cream (240 ml)
  • ½ cup chicken broth (120 ml)
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning (basil, oregano, thyme, rosemary blend)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Pat dry the chicken breasts with paper towels and season generously with salt, pepper, and Italian seasoning.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering but not smoking.
  3. Sear the chicken breasts for about 5-6 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Remove chicken and set aside, tented with foil.
  4. Reduce heat to medium, add butter to the skillet, then sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  5. Pour in chicken broth and heavy cream, scraping the bottom of the pan to loosen browned bits, and bring to a gentle simmer.
  6. Slowly stir in grated Parmesan cheese until melted and sauce thickens slightly, about 3-4 minutes. Add red pepper flakes if using, and adjust salt and pepper to taste.
  7. Return chicken breasts to the skillet, spoon sauce over them, and simmer together for 3-5 minutes to meld flavors and warm through.
  8. Garnish with fresh basil or parsley before serving.

Notes

Use a meat thermometer to avoid overcooking chicken. Stir sauce constantly when adding Parmesan to prevent curdling. If sauce is too thick, add more chicken broth or cream to loosen. Rest chicken after searing to keep it juicy. For dairy-free, substitute coconut cream and nutritional yeast. Chicken thighs can be used with adjusted cooking time.
