  • 3 cloves garlic, minced
  • 1 cup low sodium chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Pat dry 4 boneless, skinless chicken breasts and season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook about 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken from pan and tent with foil to keep warm.
  3. Lower heat to medium. Add 3 minced garlic cloves and 1/3 cup chopped sun-dried tomatoes to the pan. Stir frequently for 1-2 minutes until fragrant but not burnt.
  4. Pour in 1 cup low sodium chicken broth and scrape up any browned bits from the pan bottom. Stir in 3/4 cup heavy cream, 1 teaspoon dried oregano, and optional 1/4 teaspoon red pepper flakes. Bring sauce to a gentle simmer.
  5. Stir in 1/3 cup freshly grated Parmesan cheese and 1 tablespoon butter. Cook for 3-4 minutes, stirring, until sauce thickens slightly and becomes creamy. Add a splash more broth or cream if sauce is too thick.
  6. Nestle chicken breasts back into the pan and spoon sauce over them. Simmer on low for another 2-3 minutes to let flavors meld and chicken reheat gently.
  7. Just before serving, sprinkle 1/4 cup chopped fresh basil over the top.

Pat chicken dry before seasoning for better sear. Use oil-packed sun-dried tomatoes for best flavor. Avoid high heat after adding cream to prevent sauce breaking.
