A creamy, garlicky white bean hummus enhanced with fresh garlic scapes for a bright, fresh twist. Perfect as a dip, spread, or snack, this easy recipe comes together in under 15 minutes.

  • 1 ½ cups cooked white beans (about 1 can, 15 oz/425 g), drained and rinsed
  • 45 large garlic scapes, chopped
  • 3 tablespoons extra virgin olive oil, plus extra for drizzling
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons tahini (optional)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon ground black pepper
  • 24 tablespoons water, to adjust consistency

Instructions

  1. Rinse and roughly chop 4-5 garlic scapes into 1-inch pieces.
  2. Drain and rinse white beans thoroughly to remove excess sodium and canned taste.
  3. In a high-speed blender or food processor, combine white beans, chopped garlic scapes, 3 tablespoons olive oil, 2 tablespoons tahini, and 2 tablespoons lemon juice. Pulse a few times to break down ingredients.
  4. Blend continuously for 1-2 minutes until creamy, scraping down sides with a spatula as needed.
  5. Add 2-4 tablespoons water one tablespoon at a time, blending after each addition until desired consistency is reached.
  6. Season with ½ teaspoon salt and ¼ teaspoon black pepper, then blend briefly to mix.
  7. Taste and adjust by adding more lemon juice or olive oil if desired.
  8. Transfer to a bowl, drizzle with extra olive oil, and garnish with chopped garlic scapes or smoked paprika.

Notes

Use a high-speed blender or food processor for the creamiest texture. Rinse canned beans well to avoid metallic flavor. Adjust water to control dip thickness. For a smoky flavor, add smoked paprika or roasted garlic scapes. Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
