Instructions

  1. Place graham crackers in a food processor and pulse until fine crumbs form, or crush them in a sealed bag with a rolling pin.
  2. Transfer crumbs into a mixing bowl, add melted butter and granulated sugar, and stir until evenly coated.
  3. Pour crumb mixture into the bottom of a 9-inch springform pan or pie dish and press firmly and evenly across the bottom and slightly up the sides.
  4. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth, about 2-3 minutes.
  5. Gradually add powdered sugar, mixing well after each addition to avoid lumps.
  6. Add lemonade concentrate, lemon zest, and vanilla extract to the cream cheese mixture and mix until smooth and combined.
  7. In a separate chilled bowl, whip heavy cream on medium-high speed until stiff peaks form, about 3-5 minutes.
  8. Gently fold whipped cream into the lemonade mixture in three additions using a rubber spatula, keeping the mixture light and airy.
  9. Pour filling over the prepared crust and spread evenly.
  10. Cover loosely with plastic wrap or foil and freeze for at least 4 hours or overnight.
  11. Remove from freezer about 10 minutes before serving to soften slightly.
