  • 8 slices thick-cut bacon (about 8 ounces)
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 pounds Russet potatoes, peeled and diced into ½-inch cubes
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 ½ cups sharp cheddar cheese, freshly shredded
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper (plus more to taste)
  • ¼ cup fresh chives, chopped (for garnish)

Instructions

  1. Cook the bacon in a cold large skillet over medium heat, flipping occasionally, until crispy (8-10 minutes). Transfer to a paper towel-lined plate to drain, then crumble or chop. Reserve 2 tablespoons of bacon fat in the skillet.
  2. Add the diced onion to the skillet with the reserved bacon fat. Cook over medium heat, stirring occasionally, until soft and translucent (about 5 minutes). Add the minced garlic and cook for 30 seconds until fragrant.
  3. Place the diced potatoes in the bottom of a 6-quart slow cooker. Pour the sautéed onion and garlic mixture over the potatoes. Add the chicken broth, 1 teaspoon salt, and ½ teaspoon pepper. Stir gently.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
  5. Use an immersion blender to blend about half of the soup directly in the crockpot until you reach a chunky-creamy consistency. (Alternatively, blend in batches in a countertop blender, being careful with hot liquid.)
  6. Stir in the heavy cream and 1 cup of the shredded cheddar cheese until melted and smooth. Taste and adjust seasoning with more salt and pepper if needed.
  7. Ladle the soup into bowls. Top with the remaining shredded cheddar cheese, crumbled bacon, and fresh chives. Serve immediately.

Notes

For best results, shred your own cheddar cheese to avoid graininess. Sautéing onions and garlic in bacon fat is crucial for flavor. Add dairy at the end to prevent curdling. The soup thickens as it sits; add a splash of broth when reheating.
