  • 4 boneless, skinless chicken breasts
  • 1/2 cup chopped sun-dried tomatoes (oil-packed preferred)
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup low sodium chicken broth
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian herbs (basil, oregano, thyme blend)
  • 1/4 tsp red pepper flakes (optional)
  • 12 oz penne pasta
  • 1 tbsp olive oil (optional, for sautéing garlic)
  • Salt and pepper to taste

Instructions

  1. Pat dry chicken breasts and season with salt, pepper, and dried Italian herbs.
  2. In a bowl, mix sun-dried tomatoes, minced garlic, chicken broth, heavy cream, and softened cream cheese until creamy. Optionally sauté garlic in olive oil before mixing for richer flavor.
  3. Place chicken breasts in the bottom of the crockpot and pour the sun-dried tomato sauce over the chicken.
  4. Cook on low for 4-5 hours or on high for 2.5-3 hours until chicken is tender and easily shredded.
  5. About 20 minutes before chicken is done, cook penne pasta in salted boiling water until al dente, then drain.
  6. Remove chicken from crockpot and shred with two forks.
  7. Stir Parmesan cheese and red pepper flakes (if using) into the crockpot sauce, then return shredded chicken to the pot and mix well.
  8. Add cooked pasta to the crockpot and gently stir to coat noodles with sauce.
  9. Let everything warm together on low for 10-15 minutes to thicken the sauce and marry flavors.
  10. Taste and adjust salt and pepper as needed. Serve garnished with fresh basil or extra Parmesan if desired.

Notes

Cook pasta separately to avoid mushiness. For thicker sauce, add a cornstarch slurry during final warm-up. Let chicken rest before shredding to retain juices. Use fresh chicken breasts for best texture. Dairy-free and low-carb variations available.
