  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika

  • ½ cup sour cream (for lime crema)
  • 2 tablespoons fresh lime juice (about 1 lime, for lime crema)
  • 1 teaspoon lime zest (for lime crema)

Instructions

  1. Sauté the aromatics (optional but recommended): Heat 1 tablespoon of butter or oil in a large skillet over medium heat. Add the diced onion and cook, stirring occasionally, until translucent and soft—about 5 minutes. Add the minced garlic, ground cumin, chili powder, and smoked paprika, and cook for another minute until fragrant.
  2. Transfer to the slow cooker: Scrape the onion and spice mixture into the bottom of your crockpot. Place the chicken breasts on top of the aromatics.
  3. Add the liquids: Pour the enchilada sauce and chicken broth over the chicken. Add the diced green chiles (with their liquid) and stir gently to combine. The chicken should be mostly submerged.
  4. Cook low and slow: Cover the crockpot and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. The chicken is ready when it shreds easily with two forks.
  5. Shred the chicken: Carefully remove the chicken breasts from the slow cooker and place them on a cutting board. Use two forks to shred the meat into bite-sized pieces. Return the shredded chicken to the crockpot.
  6. Make it creamy: In a small bowl, microwave the softened cream cheese for about 20 seconds to make it even softer. Ladle about 1 cup of the hot soup broth into the bowl with the cream cheese and whisk until smooth and fully combined. Pour the cream cheese mixture back into the crockpot and stir well.
  7. Blend for texture (optional but transformative): Using an immersion blender, give the soup a few quick pulses—just enough to break up some of the shredded chicken and thicken the broth. If using a regular blender, blend 2 cups of the soup (carefully, in batches) and stir it back in.
  8. Season and simmer: Taste the soup and add salt and pepper as needed. Let it simmer on LOW for another 15-20 minutes to let the flavors meld.
  9. Make the lime crema: While the soup finishes, combine the sour cream, fresh lime juice, lime zest, and a pinch of salt in a small bowl. Whisk until smooth and creamy. Cover and refrigerate until ready to serve.
  10. Serve and garnish: Ladle the soup into bowls and drizzle the lime crema on top. Add your favorite toppings—shredded cheese, fresh cilantro, diced avocado, and a handful of crushed tortilla chips for crunch. Serve immediately.

Notes

Do not skip the stovetop step if possible—it deepens the flavor. Always temper the cream cheese with hot broth to prevent curdling. Season at the end to control salt. The lime crema is best made fresh, just before serving. This soup freezes well for up to 3 months.
