  • 4 oz cream cheese, softened and cubed
  • 2 cups sharp cheddar cheese, freshly shredded
  • ½ cup dill pickles, finely chopped
  • 2 tablespoons pickle juice
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • ½ teaspoon smoked paprika (optional)

Instructions

  1. Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink—about 6-8 minutes. Drain off excess fat if needed (leave about a tablespoon for flavor). Add the diced onion and cook for 3 minutes until softened. Stir in the minced garlic and cook for 30 seconds until fragrant.
  2. Make the roux: Sprinkle the flour over the beef and onion mixture. Stir constantly for 1-2 minutes until the flour is fully incorporated and lightly golden.
  3. Transfer to the crockpot: Scrape the beef mixture into your slow cooker. Pour in the beef broth, Worcestershire sauce, Dijon mustard, and paprika. Stir everything together.
  4. Cook low and slow: Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours. The soup should be hot and bubbly around the edges when it’s ready.
  5. Add the dairy: About 20 minutes before serving, stir in the cubed cream cheese until it melts completely. Then slowly pour in the milk and heavy cream while stirring.
  6. Melt the cheese: Add the shredded cheddar cheese a handful at a time, stirring after each addition until fully melted.
  7. Add the pickles: Stir in the chopped dill pickles and pickle juice. Taste and adjust salt and pepper as needed.
  8. Serve immediately: Ladle into bowls and top with your favorite garnishes.

Notes

For best results, shred your own cheese to avoid graininess. Add dairy at the end to prevent curdling. If soup is too thick, add a splash of warm broth or milk. If too thin, let it cook uncovered on HIGH for 15-20 minutes or stir in a cornstarch slurry.
