  • 2 cups fresh or frozen corn kernels, thawed
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1 large jalapeño pepper, sliced and charred
  • 2 teaspoons Tajín seasoning
  • 1 tablespoon fresh lime juice
  • ½ teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Heat a dry skillet or grill pan over medium-high heat. Add jalapeño slices and cook, turning occasionally, until blistered and slightly softened, about 4-5 minutes. Remove and set aside to cool.
  2. If using fresh corn, cut kernels from the cob. If frozen, thaw and drain well. Pat dry with paper towels to avoid watery dip.
  3. In a mixing bowl, beat together softened cream cheese, sour cream, and mayonnaise until smooth and fluffy, about 2-3 minutes.
  4. Stir in garlic powder, lime juice, 1 teaspoon of Tajín seasoning, salt, and black pepper. Adjust seasoning to taste.
  5. Fold in the corn kernels and charred jalapeño slices (chopped if desired).
  6. Sprinkle remaining Tajín over the top and mix in chopped fresh cilantro if using.
  7. Cover and refrigerate for at least 30 minutes to let flavors meld. Serve chilled or at room temperature.

Notes

Char jalapeño carefully to avoid bitterness; drain corn well to prevent watery dip. For a smoother texture, pulse corn and jalapeño briefly in a food processor. Adjust heat by removing jalapeño seeds or adding cayenne pepper. Chill dip for at least 30 minutes before serving for best flavor.
