  • 2 cups cooked, shredded chicken (canned or rotisserie)
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup crumbled blue cheese or extra shredded cheddar (optional, for topping)
  • 2 tablespoons chopped green onions or fresh chives (for garnish)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 20 minutes or microwaving in 10-second bursts until soft but not melted.
  2. Heat a medium skillet over medium heat. Add the softened cream cheese, sour cream, and ranch dressing. Stir constantly until smooth, about 2-3 minutes.
  3. Add the buffalo wing sauce and stir until the base turns a uniform orange-pink color. Taste and adjust heat if desired.
  4. Fold in the shredded chicken and cook for 2 minutes, stirring until every piece is coated.
  5. Reduce heat to low. Add the shredded cheddar and mozzarella, one handful at a time, stirring after each addition until fully melted and the dip is thick and creamy, about 2-3 minutes. If too thick, add a tablespoon of milk or chicken broth.
  6. Optional: Transfer the dip to an oven-safe baking dish. Sprinkle with extra cheese or blue cheese crumbles.

Notes

For a smoother melt, shred your own cheese from a block instead of using pre-shredded. Let the dip rest for 5 minutes after baking to set. The dip tastes even better the next day as flavors meld. Not recommended for freezing.
