  • 8 oz cream cheese, softened
  • 1/2 cup buffalo sauce (120ml), medium heat
  • 1/2 cup ranch dressing (120ml)
  • 1 cup shredded cheddar cheese (100g), sharp cheddar preferred
  • 1/2 cup blue cheese crumbles (50g), optional
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 large bag blue tortilla chips (about 10 oz / 280g) for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred the chicken finely, removing skin and bones if using rotisserie chicken.
  3. Soften the cream cheese by leaving it at room temperature for about 30 minutes or microwaving for 20 seconds.
  4. In a mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch dressing. Beat with a hand mixer or whisk until smooth and well blended.
  5. Add the shredded chicken, garlic powder, onion powder, salt, and pepper. Stir gently but thoroughly to mix evenly.
  6. Fold in the shredded cheddar cheese and blue cheese crumbles if using.
  7. Transfer the mixture to an 8×8-inch baking dish and smooth the top with a spatula.
  8. Bake for 20-25 minutes or until the dip is bubbly and the top starts to turn golden brown.
  9. Remove from the oven and let it cool for 5 minutes to thicken slightly.
  10. Serve warm with blue tortilla chips. To keep warm longer, set the dish on a warming tray or low oven heat.

Notes

If the dip is too thick, add a splash of milk or extra ranch dressing before baking to loosen it without diluting flavor. Avoid overbaking to prevent burnt edges. For dairy-free, use vegan cream cheese and ranch dressing and gluten-free chips. The dip can be prepared ahead and refrigerated, then baked before serving.
