  • 8 ounces egg noodles
  • 8 ounces cremini or white mushrooms, sliced
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 2 cups low sodium beef broth
  • 1 cup full-fat sour cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Slice the beef into thin strips about 1/4 inch thick. Clean and slice mushrooms, chop onion finely, and mince garlic.
  2. Bring a large pot of salted water to a boil. Add egg noodles and cook until al dente, about 6-8 minutes. Drain and toss with a little butter or olive oil to prevent sticking.
  3. Heat 2 tablespoons butter in a large skillet over medium-high heat. Add beef in a single layer and brown for 2-3 minutes per side. Remove beef and set aside.
  4. In the same skillet, add remaining 1 tablespoon butter. Lower heat to medium and sauté onions until translucent, about 4 minutes. Add garlic and cook 30 seconds until fragrant. Add mushrooms and cook until browned and moisture evaporates, about 6-8 minutes.
  5. Sprinkle flour over mushrooms and stir constantly for 1-2 minutes to cook out raw flour taste.
  6. Slowly pour in beef broth while stirring to avoid lumps. Bring to a simmer and thicken for 3-5 minutes.
  7. Stir in Worcestershire sauce and Dijon mustard. Lower heat to medium-low and gradually add sour cream, stirring gently to combine.
  8. Return beef to skillet and cook just until heated through, about 2-3 minutes. Avoid boiling to prevent sour cream from curdling. Season with salt and pepper to taste.
  9. Serve stroganoff over warm egg noodles and garnish with fresh parsley if desired.

Notes

Do not overcrowd the pan when browning beef to ensure proper searing. Add sour cream off heat or on very low heat to prevent curdling. If sauce is too thick, add a splash of beef broth or water to loosen. Use fresh mushrooms for best flavor. For gluten-free option, substitute all-purpose flour with almond flour and use gluten-free noodles.
