A warm, spiced pumpkin chai latte with steamed oat milk that comes together in under ten minutes. This café-quality drink features a homemade chai concentrate with real pumpkin purée and a silky oat milk foam, perfect for cozy fall mornings.

  • 2 black tea bags (Assam or strong breakfast blend)
  • 2 tablespoons pumpkin purée (100% pumpkin, not pie filling)
  • 2 tablespoons brown sugar (light or dark)
  • 1 teaspoon pumpkin pie spice (store-bought or homemade)
  • 1/2 teaspoon vanilla extract (pure)
  • Pinch of black pepper
  • 1 1/2 cups oat milk (barista blend preferred)
  • 1 teaspoon maple syrup (optional, for extra sweetness)
  • For homemade pumpkin pie spice blend (makes about 2 tablespoons):
  • 1 tablespoon cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice

Instructions

  1. Make the spiced pumpkin chai concentrate: In a small saucepan, combine water, pumpkin purée, brown sugar, and pumpkin pie spice. Whisk until pumpkin breaks up and sugar dissolves.
  2. Bring mixture to a gentle simmer over medium heat (small bubbles around edges, not a rolling boil).
  3. Add tea bags and a pinch of black pepper. Reduce heat to low and steep for 5 minutes. Set a timer to avoid over-steeping.
  4. Remove tea bags (do not squeeze them). Stir in vanilla extract.
  5. Pour concentrate through a fine-mesh strainer into a heatproof measuring cup or directly into your mug to remove any solids.
  6. Steam the oat milk: While chai steeps, heat oat milk in a separate saucepan over medium-low heat until steaming but not boiling (about 150°F or until small bubbles form around edges). If using a frother, follow manufacturer’s instructions. If using a handheld frother, warm milk first, then transfer to a tall jar or French press and froth until doubled in volume and velvety. If adding maple syrup, stir into warm milk before frothing.
  7. Assemble the latte: Pour spiced pumpkin chai concentrate into your mug, filling it about one-third full.
  8. Slowly pour steamed oat milk over the back of a spoon into the center of the mug to create layers. Spoon remaining foam on top.
  9. Garnish with a pinch of pumpkin pie spice or cinnamon. Add a star anise pod or cinnamon stick if desired. Serve immediately.

Notes

Don’t skip the black pepper—it enhances the spices without adding heat. Use fresh spices for best flavor. For batch prep, make a double batch of chai concentrate and store in the fridge for up to 5 days. To reheat, warm on stovetop (not microwave). For an iced version, cool concentrate completely, pour over ice, and top with cold oat milk.
