  • 23 tablespoons (3045 ml) honey or maple syrup
  • 45 whole cinnamon sticks
  • 1 teaspoon (about 20) whole cloves
  • 23 whole star anise pods
  • 1 large fresh orange (juice and peel)
  • 1 medium fresh apple (for garnish, such as Honeycrisp or Fuji)
  • Optional: 2 tablespoons granulated sugar mixed with 1 teaspoon ground cinnamon (for rim)

Instructions

  1. Infuse the Cider: In a medium saucepan, combine 4 cups apple cider, 4-5 cinnamon sticks, 1 teaspoon whole cloves, and 2-3 star anise pods. Bring to a gentle simmer over medium heat (do not boil). Simmer for 8-10 minutes.
  2. Add Sweetness and Citrus: Remove from heat. Stir in 2-3 tablespoons honey or maple syrup until dissolved. Squeeze in juice of half an orange (about 2 tablespoons) and stir.
  3. Strain the Cider: Pour through a fine-mesh strainer into a heatproof bowl or large measuring cup. Discard solids. Let cool for about 5 minutes until warm, not hot.
  4. Prepare the Glasses (optional): If using cinnamon sugar rim, pour mixture onto a small shallow dish. Run a cut orange slice or drop of honey around rim of each glass, then dip into cinnamon sugar to coat.
  5. Assemble the Mimosas: Fill each glass halfway with warm spiced cider. Slowly pour chilled champagne over the back of a spoon into the glass to fill the rest. Pour slowly to preserve bubbles.
  6. Garnish and Serve: Garnish each glass with a thin slice of fresh apple and a thin strip of orange peel (white pith removed). Serve immediately.

Notes

Do not boil the cider; a gentle simmer is key. Use a dry sparkling wine to balance sweetness. The spiced cider base can be made up to 5 days ahead and reheated gently. For a non-alcoholic version, replace champagne with sparkling apple cider or ginger ale.
