  • ½ cup (113g) unsalted butter, softened (for frosting)
  • 2 ½ cups (300g) powdered sugar
  • 23 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Yellow food coloring
  • Black decorating gel or melted chocolate

Instructions

  1. Take the butter and eggs out of the fridge about 30 minutes before starting to reach room temperature.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract, scraping down the bowl sides.
  5. Reduce mixer speed to low and gradually add flour mixture alternating with milk, starting and ending with flour. Mix just until combined.
  6. Form dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  7. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  8. Roll dough on a lightly floured surface to ¼ inch (6 mm) thickness. Cut out school bus shapes and place 1 inch apart on baking sheets.
  9. Bake for 8-10 minutes until edges just start turning golden. Avoid overbaking.
  10. Cool cookies on baking sheet for 5 minutes, then transfer to wire racks to cool completely.
  11. For frosting, beat softened butter until creamy. Gradually add powdered sugar on low speed.
  12. Add milk and vanilla extract, increase speed to medium and beat until smooth. Mix in yellow food coloring until desired shade is reached.
  13. Spread frosting evenly on cooled cookies using a small offset spatula or butter knife.
  14. Use black decorating gel or melted chocolate in a piping bag to add wheels, windows, and bus details.
  15. Let decorated cookies sit at room temperature for about 30 minutes to set frosting before serving.
