Cozy Smoky Kielbasa and White Bean Soup: Easy One-Pot Recipe

A hearty, smoky soup made with kielbasa, white beans, and kale in a savory broth. Ready in about 35 minutes, this one-pot meal is perfect for cold days and uses simple pantry ingredients.

  • 1214 oz smoked kielbasa, sliced into 1/4-inch rounds
  • 2 cans (15 oz each) white beans (cannellini, Great Northern, or navy), rinsed and drained
  • 1 large yellow onion, diced
  • 45 cloves garlic, minced
  • 4 cups chicken or vegetable broth (low-sodium preferred)
  • 1 can (14.5 oz) fire-roasted diced tomatoes (with juices)
  • 34 cups kale or spinach, roughly chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika (sweet or hot)
  • 2 bay leaves
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Optional garnishes: fresh parsley, grated Parmesan cheese, olive oil, lemon juice

Instructions

  1. Prep all ingredients: slice kielbasa, dice onion, mince garlic, rinse and drain beans, chop kale (remove tough stems).
  2. Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add kielbasa in a single layer (work in batches if needed) and cook undisturbed for 2-3 minutes until deeply browned. Flip and brown the other side. Transfer to a plate; do not wipe out the pot.
  3. Reduce heat to medium. Add remaining 1 tablespoon olive oil. Add diced onion and cook, stirring occasionally, for 4-5 minutes until soft and translucent, scraping up browned bits. Add garlic, dried thyme, and smoked paprika; cook 30-60 seconds until fragrant.
  4. Pour in broth and add fire-roasted tomatoes (with juices). Stir, scraping up any remaining browned bits. Add bay leaves. Bring to a gentle boil.
  5. Add rinsed white beans and return browned kielbasa to the pot. Reduce heat to low, cover, and simmer for 15-20 minutes.
  6. Remove lid and stir in chopped kale (or spinach). Cook 3-5 minutes until wilted and tender. Taste and adjust seasoning with salt and black pepper.
  7. Remove bay leaves. Ladle into bowls and garnish as desired. Serve hot with crusty bread.

Notes

For best flavor, brown the kielbasa well to develop a deep smoky base. The soup thickens as it sits; add extra broth or water if needed. Leftovers taste even better the next day. For a vegetarian version, use plant-based sausage and vegetable broth with a splash of liquid smoke.
