A quick and easy fall-inspired cold brew coffee drink blending smooth cold brew with homemade pumpkin spice syrup and oat milk for a cozy, refreshing beverage perfect for fall gatherings.

  • 2 tablespoons pumpkin puree (plain canned pumpkin)
  • 1 to 2 tablespoons maple syrup (Grade A amber)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon vanilla extract
  • ½ cup (120 ml) oat milk (or any plant-based milk)
  • Ice cubes as needed

Instructions

  1. In a small bowl or jar, combine 2 tablespoons pumpkin puree, 1 to 2 tablespoons maple syrup (adjust sweetness to taste), 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ⅛ teaspoon ground cloves, and ½ teaspoon vanilla extract.
  2. Whisk or shake vigorously until everything is well blended and smooth. If too thick, add a teaspoon of water to loosen slightly.
  3. Measure out 1 cup (240 ml) of cold brew coffee into your serving glass.
  4. Pour the pumpkin spice syrup into the cold brew and stir gently to combine.
  5. Slowly add ½ cup (120 ml) of oat milk. Stir gently or swirl the glass to create a marbled effect before mixing fully.
  6. Fill the rest of the glass with ice cubes to your liking.
  7. Taste and adjust sweetness or spice by adding more syrup or a sprinkle of cinnamon if desired.
  8. Serve immediately chilled.

Notes

Use fresh ground spices for best flavor. Adjust sweetness with maple syrup or honey. For dairy-free, swap oat milk with almond, soy, or coconut milk. Pumpkin puree should be plain, not pumpkin pie filling. Make pumpkin spice syrup ahead and store refrigerated up to 5 days. Cold brew coffee lasts 1-2 weeks refrigerated. Serve immediately after mixing for best taste. Warm syrup slightly for a hot version.
