  • 1/4 tsp ground ginger
  • 1/2 tsp salt
  • 3/4 cup (150 g) granulated sugar
  • 1/4 cup (50 g) brown sugar
  • 1/3 cup (80 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 3/4 cup (130 g) semi-sweet chocolate chips
  • 1/2 cup (60 g) chopped walnuts, toasted

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, mix granulated sugar, brown sugar, and vegetable oil until well blended. Add eggs one at a time, beating after each addition. Stir in vanilla extract.
  4. Add mashed bananas and pumpkin puree to the wet mixture and stir until combined.
  5. Pour dry ingredients into wet ingredients and fold gently with a spatula until just combined; do not overmix.
  6. Fold in chopped toasted walnuts, reserving a small handful for topping.
  7. Melt chocolate chips gently in microwave-safe bowl in 20-second bursts, stirring between each, until smooth. Let cool slightly.
  8. Pour half the batter into the loaf pan, drizzle half the melted chocolate over it. Add remaining batter, then drizzle remaining chocolate. Use a butter knife to swirl chocolate through batter. Sprinkle reserved walnuts on top.
  9. Bake for 55-65 minutes, checking at 50 minutes with a toothpick; it should come out with moist crumbs but no raw batter. Cover with foil if top browns too quickly.
  10. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
