  • 1 packet (about 1 ounce) ranch seasoning mix or 2 tablespoons homemade ranch seasoning
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup (240 ml) chicken broth
  • 1/2 cup (120 ml) sour cream (full-fat recommended)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste (about 1/2 teaspoon recommended)
  • Freshly ground black pepper to taste
  • 1 tablespoon olive oil or butter (for searing, optional)

Instructions

  1. Pat the pork chops dry with paper towels and season lightly with salt and pepper.
  2. Heat 1 tablespoon olive oil or butter in a skillet over medium-high heat. Sear each pork chop for 2-3 minutes per side until golden brown. Set aside.
  3. In a medium bowl, combine ranch seasoning mix, condensed cream of mushroom soup, chicken broth, garlic powder, and onion powder. Whisk until smooth and well blended.
  4. Place the seared pork chops in the crockpot in a single layer. Pour the ranch gravy mixture evenly over the chops, ensuring they are mostly covered.
  5. Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours until pork is tender and gravy thickened.
  6. About 15 minutes before serving, stir in the sour cream gently into the crockpot. Warm through but do not boil to prevent curdling.
  7. Taste the gravy and adjust salt and pepper as needed. If too thick, add a splash of chicken broth or water to loosen.
  8. Serve the pork chops with creamy ranch gravy immediately.

Notes

Searing pork chops before slow cooking is optional but highly recommended for better flavor and moisture retention. Add sour cream near the end to prevent curdling. If gravy is too thin after cooking, reduce it on HIGH uncovered or thicken with cornstarch slurry. For dairy-free, substitute sour cream with coconut yogurt and use dairy-free ranch seasoning. Bone-in chops stay juicier and more flavorful. Avoid overcooking on HIGH to prevent dryness.
