  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 6 cups low-sodium chicken broth

  • Salt and black pepper to taste
  • 4 cups fresh kale, stems removed and chopped
  • 9 oz fresh or refrigerated cheese tortellini
  • 1/2 cup fresh Parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Brown the Sausage: Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage (casings removed) and break it up with a wooden spoon. Cook until nicely browned, with some crispy edges, about 5-7 minutes. Transfer the cooked sausage to a plate, leaving about 1 tablespoon of fat in the pot.
  2. Sauté the Aromatics: Reduce heat to medium. Add the diced onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and crushed red pepper flakes, stirring constantly for 30 seconds until fragrant.
  3. Build the Broth: Pour in about 1/2 cup of the chicken broth and scrape up all the browned bits from the bottom of the pot (deglazing). Then add the remaining 5 1/2 cups of broth and bring to a boil.
  4. Add the Tortellini: Once the broth is boiling, stir in the tortellini. Cook for 2 minutes less than the package directions (usually about 5-7 minutes total).
  5. Wilt the Kale: Add the chopped kale to the pot. Stir and cook until bright green and tender, about 2-3 minutes.
  6. Finish the Soup: Return the cooked sausage to the pot. Reduce heat to low and stir in the heavy cream. Let everything simmer together for 2 minutes. Taste and add salt and pepper as needed.
  7. Serve: Ladle into bowls and top with generous amounts of fresh Parmesan and a sprinkle of parsley. Serve immediately.

Notes

The soup will thicken as it sits because the tortellini absorbs liquid. If making ahead, add an extra 1/2 cup of broth when reheating. For best results, cook tortellini slightly underdone to avoid mushiness. Taste before adding salt as sausage, broth, and Parmesan all contribute salt. Let soup rest for 5 minutes before serving to allow flavors to meld.
