Cozy Crockpot White Chicken Chili with Cream Cheese

An incredibly easy, creamy white chicken chili made in the slow cooker with cream cheese, white beans, and chicken. It’s the ultimate comfort food that’s perfect for busy weeknights and guaranteed to be a crowd-pleaser.

  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 1 can (15 oz / 425g) Great Northern beans, drained and rinsed
  • 1 can (15 oz / 425g) white corn, drained
  • 1 can (4 oz / 113g) diced green chiles
  • 1 block (8 oz / 226g) cream cheese, softened and cubed
  • 2 cups (480 ml) chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Optional toppings: shredded Monterey Jack cheese, sliced avocado, lime juice, sour cream, tortilla chips, hot sauce

Instructions

  1. Prep the ingredients: dice the onion, mince the garlic, drain and rinse the beans, drain the corn.
  2. Place the chicken breasts in the bottom of a 6-quart or larger slow cooker. Sprinkle the diced onion and minced garlic over the chicken. Add the drained beans, corn, and diced green chiles.
  3. In a small bowl, whisk together the cumin, chili powder, oregano, salt, and pepper. Sprinkle the spice mixture over the ingredients in the slow cooker. Pour the chicken broth over everything. Do not stir.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and shreds easily.
  5. Remove the chicken from the slow cooker and shred it with two forks.
  6. Add the cubed cream cheese to the slow cooker and whisk until completely smooth and incorporated.
  7. Return the shredded chicken to the slow cooker and stir to combine. Taste and adjust seasoning as needed.
  8. Let the chili rest for 10 minutes before serving.
  9. Ladle into bowls and garnish with fresh cilantro and desired toppings.

Notes

For best results, use full-fat block cream cheese and let it soften before adding. If the chili is too thin, mash some beans against the side of the slow cooker before adding cream cheese, or stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 30 minutes of cooking.
