  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground ginger

  • 1/2 tsp salt
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (113g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 medium ripe pears, peeled and grated
  • 3/4 cup (180ml) buttermilk
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (30g) powdered sugar
  • 1/2 tsp vanilla extract (for cream cheese swirl)
  • 1 egg yolk (for cream cheese swirl)

Instructions

  1. Peel and grate the pears finely using a box grater. Set aside.
  2. In a small bowl, beat the softened cream cheese with powdered sugar, vanilla extract, and egg yolk until smooth and creamy. Cover and chill until ready to use.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, cardamom, ginger, cloves, and salt.
  4. In a large bowl, beat the softened butter with granulated sugar using an electric mixer or hand whisk until light and fluffy.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
  6. Alternately add the dry ingredient mixture and buttermilk to the butter mixture, beginning and ending with the dry ingredients. Fold gently just until combined.
  7. Gently fold the grated pears into the batter.
  8. Lightly grease a 9×5 inch loaf pan. Pour half of the batter into the pan.
  9. Dollop spoonfuls of the cream cheese mixture evenly over the batter.
  10. Pour the remaining batter over and use a knife or skewer to gently swirl the cream cheese through the batter without mixing completely.
  11. Preheat oven to 350°F (175°C). Bake the bread on the center rack for 55 to 65 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Tent with foil after 40 minutes if the top browns too quickly.
  12. Let the bread cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Grate pears instead of chopping to keep the bread moist without sogginess. Gently swirl the cream cheese to maintain distinct layers. If pears are very juicy, squeeze excess moisture before grating. Tent with foil if top browns too quickly. Let bread cool completely before slicing to avoid crumbling. Can substitute pears with apples or figs. For gluten-free, use a 1-to-1 gluten-free flour blend. For dairy-free, use plant-based cream cheese and milk alternatives. Bread can be made into muffins by reducing baking time to 20-25 minutes.
