This cozy brown butter apple crisp features a nutty, golden brown butter and oat streusel topping over tender, jammy apples. It’s a simple, forgiving dessert that comes together in under an hour using pantry staples.

Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced into ¼-inch thick pieces (about pounds total; mix of Granny Smith and Honeycrisp recommended)
  • ⅓ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice
  • ½ cup unsalted butter
  • ¾ cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar (light or dark)
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the middle of the oven.
  2. Make the brown butter: Place a 10-inch oven-safe skillet over medium heat. Add ½ cup unsalted butter. Let it melt completely, swirling occasionally. Cook until the butter foams, then subsides, and golden brown specks form at the bottom (about 5-7 minutes). Remove from heat immediately when it smells nutty and is deep amber.
  3. Make the streusel: Let the brown butter cool in the pan for about 2 minutes. Add rolled oats, all-purpose flour, brown sugar, granulated sugar, cinnamon, and salt directly into the skillet. Stir until well combined and crumbly. Set aside.
  4. Prepare the apples: In a large mixing bowl, combine sliced apples, granulated sugar, all-purpose flour, cinnamon, nutmeg, salt, and lemon juice. Toss until evenly coated.
  5. Assemble the crisp: Scoop about half of the streusel out of the skillet and set aside. Spread the remaining streusel evenly across the bottom of the skillet, pressing down slightly. Pile the apple mixture on top, spreading into an even layer. Sprinkle the reserved streusel evenly over the apples.
  6. Bake: Place the skillet in the preheated oven. Bake for 35-40 minutes, until the streusel is golden brown and the apple filling is bubbling around the edges. If the streusel browns too quickly after 25 minutes, tent loosely with foil.
  7. Cool slightly: Remove from oven and let cool on a wire rack for at least 15 minutes before serving.

Notes

For best results, use a mix of tart and sweet apples (e.g., Granny Smith and Honeycrisp). Don’t rush the brown butter—watch carefully to avoid burning. Let the crisp rest for 15 minutes before serving to allow the filling to set. For gluten-free, use a 1:1 gluten-free flour blend and certified gluten-free oats. For dairy-free, use vegan butter or coconut oil (skip browning if using coconut oil).
