Ingredients

Scale
  • 1 bottle sparkling apple cider, chilled
  • 2 bottles brut champagne or prosecco, chilled
  • 1 cup apple cider, chilled
  • 23 bottles ginger beer, chilled
  • 810 cinnamon sticks
  • 56 star anise pieces
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/4 cup caramel sauce
  • 1/4 cup honey
  • 2 apples (Granny Smith or Honeycrisp), thinly sliced
  • 1/2 cup fresh cranberries
  • 1/2 cup pomegranate arils
  • 68 fresh rosemary sprigs
  • 1/4 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • Edible flowers (optional, for garnish)
  • Apple brandy or bourbon (optional)
  • 1/4 cup chai concentrate (optional)
  • Whipped cream (optional)

Instructions

  1. Prep the garnishes: Thinly slice 2 apples and toss with lemon juice to prevent browning. Rinse and dry cranberries and pomegranate arils. Strip lower leaves from rosemary sprigs. Arrange everything in small bowls.
  2. Make the cinnamon sugar rim mixture: In a shallow dish, combine 1/4 cup granulated sugar with 2 teaspoons ground cinnamon. Mix well. Set next to a small dish of water or apple cider for dipping glass rims.
  3. Chill everything: Refrigerate champagne, sparkling cider, ginger beer, and apple cider for at least 2 hours before serving.
  4. Set up the bar: Arrange glasses at one end, followed by the rimming station, bottles, and garnishes. Place labels in front of each item.
  5. Make the signature mix (optional): In a small pitcher, combine 1 cup sparkling apple cider with 1/4 cup apple brandy (if using) and a cinnamon stick. Let sit for at least 30 minutes.
  6. Show guests how to assemble: Rim glass with cinnamon sugar, fill 1/3 with sparkling apple cider, then top with champagne. Add a cinnamon stick and a few cranberries. Customize with maple syrup, vanilla, rosemary, or other add-ins.
  7. Keep bubbles alive: Open champagne bottles one at a time to maintain carbonation throughout the party.

Notes

For a non-alcoholic version, use sparkling apple cider and ginger beer. The cinnamon sugar rim is non-negotiable for the best flavor. Use a dry sparkling wine to balance the sweetness of the cider.
