  • ½ cup unsalted butter, softened
  • 1 ½ cups powdered sugar
  • 2 cups graham cracker crumbs (about 14 full sheets, crushed finely)

  • Pinch of salt
  • 2 cups semi-sweet chocolate chips (Ghirardelli recommended)
  • ¼ cup unsalted butter
  • 1 tablespoon light corn syrup
  • ¼ cup white chocolate chips
  • 1 teaspoon coconut oil or shortening

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, leaving a 2-inch overhang on two sides.
  2. In a large mixing bowl, beat the softened butter and peanut butter together until smooth and creamy, about 2 minutes with an electric mixer.
  3. Add the powdered sugar, graham cracker crumbs, vanilla extract, and a pinch of salt. Mix on low speed until everything comes together into a stiff, slightly crumbly dough that holds together when pressed.
  4. Transfer the peanut butter mixture to the prepared pan. Press it down firmly and evenly using your hands or the bottom of a measuring cup. Refrigerate while making the chocolate layer.
  5. In a microwave-safe bowl, combine the semi-sweet chocolate chips, ¼ cup butter, and corn syrup. Microwave in 30-second intervals, stirring well after each, until fully melted and smooth (about 1 ½ to 2 minutes total).
  6. Pour the melted chocolate over the chilled peanut butter base. Use an offset spatula to spread it into an even layer. Tap the pan gently on the counter to release air bubbles.
  7. Refrigerate for at least 2 hours, or until the chocolate is completely set and firm to the touch. (Alternatively, freeze for about 45 minutes.)
  8. Lift the entire block out of the pan using the parchment overhang. Place on a cutting board. Use a football-shaped cookie cutter to press down firmly and cut out shapes. Gather scraps and press into a small pan to make extra.
  9. Melt the white chocolate chips with the coconut oil in the microwave in 20-second intervals, stirring until smooth. Transfer to a small piping bag or zip-top bag with the corner snipped off.
  10. Pipe small lines across the center of each football to create laces. Let the white chocolate set for about 15 minutes at room temperature, or 5 minutes in the fridge.

Notes

Use conventional creamy peanut butter (not natural) for best texture. Press the base firmly into the pan to prevent crumbling. Chill the base before adding the chocolate layer to keep layers distinct. If you don’t have a football cookie cutter, use a cardboard stencil and a sharp knife. Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months.
