  • 8 large eggs
  • 2 cups whole milk
  • 3 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 6 cups cubed bread (day-old French bread or sourdough)

  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13 baking dish with butter or non-stick spray.
  2. Brown the sausage. In a large skillet over medium-high heat, cook the breakfast sausage, breaking it up with a wooden spoon as it cooks. This takes about 6-8 minutes. Drain off any excess fat—leave just a tablespoon or two for flavor. Set aside to cool slightly.
  3. Cube your bread. If you’re using a fresh loaf, cut it into 1-inch cubes. Spread the bread cubes evenly in your greased baking dish.
  4. Layer the sausage and cheese. Sprinkle the cooked sausage evenly over the bread cubes. Then sprinkle about 2 cups of the shredded cheddar and all of the mozzarella over the top. Reserve the remaining 1 cup of cheddar for later.
  5. Whisk the egg mixture. In your large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, and paprika (if using). Whisk until everything is well combined and slightly frothy—about 30 seconds of good whisking.
  6. Pour and soak. Slowly pour the egg mixture over the bread, sausage, and cheese layers. Gently press down on the bread with a spatula to help it absorb the liquid. Cover the dish with plastic wrap and refrigerate for at least 30 minutes, or overnight.
  7. Bake covered. When you’re ready to bake, remove the plastic wrap and cover the dish with aluminum foil. Bake at 350°F for 30 minutes.
  8. Add remaining cheese and bake uncovered. After 30 minutes, remove the foil and sprinkle the remaining 1 cup of cheddar cheese over the top. Bake uncovered for another 15-20 minutes, until the casserole is golden brown, puffed up, and a knife inserted in the center comes out clean.
  9. Rest before serving. Let the casserole rest for 5-10 minutes before cutting into squares.
  10. Garnish and serve. Sprinkle with fresh parsley if desired, and serve warm.

Let the casserole soak in the fridge for at least 30 minutes or overnight for best texture. Day-old bread works best. For a vegetarian version, swap sausage for sautéed mushrooms and bell peppers. For gluten-free, use gluten-free bread.
