  • 8 ounces cream cheese, softened
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1215 slices thick-cut smoked bacon
  • Optional: fresh chives or green onions, finely chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Place bacon slices on a microwave-safe plate lined with paper towels and microwave for 2-3 minutes, until fat starts to render but bacon is still pliable. Set aside to cool slightly.
  2. Wear disposable gloves. Rinse jalapenos and pat dry. Slice each in half lengthwise. Use a small spoon or melon baller to scoop out seeds and white membranes. For milder poppers, remove all membranes; for spicier, leave some.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, smoked paprika, garlic powder, onion powder, salt, and pepper. Stir until completely combined.
  4. Fill each jalapeno half with the cream cheese mixture, level with the cut edge. Use about a heaping teaspoon per half.
  5. Wrap one slice of par-cooked bacon around the middle of each filled jalapeno half, overlapping slightly on the bottom. Place seam-side down on a wire rack set on a lined baking sheet (or directly on the lined sheet).
  6. Bake for 20-25 minutes, until bacon is crispy and browned and filling is hot and bubbly. For extra color, broil for the last 1-2 minutes, watching closely.
  7. Remove from oven and let rest for 5 minutes. Transfer to a serving platter, garnish with chopped chives if desired, and serve warm.
