  • 3 large egg whites, at room temperature
  • 3/4 cup (150 grams) granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/4 cup (45 grams) mini chocolate chips
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 200°F (93°C). Line two baking sheets with parchment paper.
  2. Place the room-temperature egg whites and cream of tartar in a clean mixing bowl. Beat on medium speed until frothy, about 30 seconds, then increase to medium-high.
  3. With the mixer running, add the sugar one tablespoon at a time. Continue beating on high speed until the meringue is glossy and holds stiff peaks, about 5 to 7 minutes. The mixture should feel smooth, not grainy.
  4. If using, gently fold in the vanilla extract with a rubber spatula.
  5. Transfer the meringue to a piping bag fitted with a round tip, or a zip-top bag with a small corner snipped off.
  6. Pipe 1.5-inch round blobs onto the prepared baking sheets, pulling up to create a small peak on top. Leave about 1 inch between each ghost.
  7. Gently press two mini chocolate chips into each ghost for eyes, being careful not to push them in too deep.
  8. Bake for 60 minutes without opening the oven door. Then turn off the oven and let the cookies cool completely inside with the door closed, about 60 to 90 minutes.
  9. Test for doneness: the cookies should lift easily off the parchment paper and be dry to the touch.

Notes

Humidity is the enemy of meringue. Avoid making these on rainy days, or extend the drying time by 20-30 minutes. Do not open the oven door during baking. Store in an airtight container at room temperature for up to 2 weeks. Do not refrigerate.
