  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon black pepper
  • 1/2 cup (113g) cold unsalted butter, frozen and grated
  • 1/2 cup (120ml) pumpkin purée
  • 1/4 cup (60ml) heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (120g) powdered sugar, sifted
  • 23 tablespoons heavy cream or milk
  • 1/4 teaspoon vanilla extract
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Grate your frozen butter on the large holes of a box grater. Put the grated butter back in the freezer while you mix the dry ingredients.
  3. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, cardamom, ginger, cloves, nutmeg, and black pepper until evenly distributed.
  4. Add the grated cold butter to the flour mixture. Toss gently with your fingers to coat the butter pieces in flour, keeping them in distinct pea-sized chunks.
  5. In a separate small bowl, whisk together the pumpkin purée, heavy cream, egg, and vanilla extract until smooth.
  6. Make a well in the center of the flour mixture and pour in the wet ingredients. Stir with a fork or rubber spatula until just combined. Stop when no dry flour remains; the dough will be shaggy.
  7. Dump the shaggy dough onto a lightly floured surface. Gently knead 3-4 times, just until it holds together. If too sticky, add a little more flour; if too dry, add a teaspoon of cream.
  8. Pat the dough into a 3/4-inch thick circle, about 8 inches across. Use a bench scraper or sharp knife to cut into 8 equal wedges.
  9. Transfer the wedges to the prepared baking sheet, spacing them about 2 inches apart.
  10. Brush the tops of the scones with a little extra cream. Optionally, sprinkle with coarse sugar.
  11. Bake for 15-18 minutes, until golden brown on top and lightly browned on the bottom. A toothpick inserted in the center should come out clean.
  12. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  13. While the scones cool, make the glaze: whisk together the powdered sugar, 2 tablespoons of cream, and vanilla extract. Add more cream a teaspoon at a time until thick but pourable.
  14. Once the scones are completely cool, drizzle the glaze over the top. Let the glaze set for 10 minutes before serving.

Notes

Keep everything cold for flaky scones. Don’t overwork the dough. For best results, freeze shaped scones for 15 minutes before baking. Start checking for doneness at 15 minutes. If dough feels too wet, add flour a tablespoon at a time.
