Ingredients

Scale
  • 6 cups apples, peeled, cored, and sliced (about 56 medium apples; Honeycrisp or Granny Smith recommended)
  • 1/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1/2 cup caramel sauce (store-bought or homemade, thick kind)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • Vanilla ice cream or whipped cream (for serving, optional)
  • Extra caramel sauce for drizzling (for serving, optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel, core, and slice apples into even, 1/4-inch thick slices (about 6 cups).
  3. In a large bowl, toss apple slices with granulated sugar, 2 tablespoons flour, 1 teaspoon cinnamon, nutmeg, and lemon juice until coated. Let sit for 5 minutes.
  4. Spread apple mixture evenly in a greased 9×9-inch baking dish. Drizzle 1/4 cup caramel sauce over the top; do not stir.
  5. In a medium bowl, whisk together oats, 1/2 cup flour, brown sugar, 1/2 teaspoon cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in nuts if using.
  6. Sprinkle streusel evenly over apples; do not press down. Drizzle remaining 1/4 cup caramel sauce over streusel in a zigzag pattern.
  7. Place dish on a baking sheet and bake for 35-40 minutes, until filling is bubbly and topping is golden brown. If streusel browns too quickly after 25 minutes, tent loosely with foil.
  8. Let cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream and extra caramel sauce if desired.

Notes

For best results, use a mix of sweet and tart apples (e.g., Honeycrisp and Granny Smith). Keep butter cold for a crumbly streusel. Let the crisp rest for 15-20 minutes after baking to allow the filling to set. Store leftovers covered in the refrigerator for up to 4 days. Reheat in a 350°F oven for 15 minutes or microwave individual portions for 30-45 seconds.
