  • ½ cup (1 stick) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Peel, core, and slice the apples into ¼-inch thick slices. You should have about 6 cups.
  3. In a medium bowl, combine the sliced apples with granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, cornstarch, and vanilla extract. Toss until evenly coated. Let sit for 5 minutes.
  4. In a large bowl, whisk together the old-fashioned oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Pour in the melted butter and vanilla extract, then stir with a rubber spatula until moistened and clumpy. Do not overmix.
  5. Pour the apple mixture into a greased 8×8-inch baking dish and spread into an even layer. Sprinkle the streusel topping evenly over the apples without pressing down.
  6. Place the dish on a baking sheet and bake for 40-45 minutes, until the topping is golden brown and the filling is bubbling around the edges. If browning too quickly, tent loosely with foil for the last 10 minutes.
  7. Cool for at least 10 minutes before serving to allow the filling to set.
  8. Serve warm, topped with vanilla ice cream, whipped cream, or a drizzle of heavy cream.
