  • 4 cups (960ml) water
  • 1 teaspoon (5g) fine sea salt
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon (3g) cinnamon
  • 1 tablespoon (15ml) coconut oil or avocado oil, melted
  • Optional: ¼ teaspoon (0.5g) nutmeg
  • Optional: 1 tablespoon (12g) brown sugar

Instructions

  1. Clean the seeds: Separate seeds from pumpkin guts. Rinse in a colander under cool water, removing large stringy pieces. Discard flat or shriveled seeds.
  2. Boil the seeds: In a medium saucepan, bring 4 cups water and 1 teaspoon salt to a rolling boil. Add seeds and boil for exactly 8 minutes.
  3. Drain and dry: Drain seeds in a colander, then spread on a clean kitchen towel or paper towels. Pat very dry until damp but not wet.
  4. Preheat air fryer: Set air fryer to 320°F (160°C) and preheat for 3 minutes.
  5. Mix the coating: In a medium bowl, whisk together melted oil, maple syrup, cinnamon, and optional nutmeg. Add dried seeds and toss until evenly coated.
  6. Arrange in basket: Spread seeds in a single layer in the air fryer basket. Do not overcrowd; cook in batches if needed.
  7. Air fry: Cook at 320°F for 8 minutes. Shake or stir, then cook for another 2-4 minutes until deep golden brown and hollow-sounding when shaken.
  8. Cool completely: Transfer seeds to a plate or baking sheet in a single layer. Cool for at least 10 minutes; they will crisp up as they cool.

Notes

Boiling the seeds for exactly 8 minutes is the secret to a light, crispy texture. Pat seeds very dry before coating to avoid steaming. Watch closely in the last 2 minutes of air frying to prevent burning. Seeds will continue to crisp as they cool.
